Robust and a great marinade, this is a vinegar lover’s vinegar! This distinctive vinegar is made by aging our own exclusive small lots of delicious California cabernet wine in oak barrels. When the vinegar reaches 7% acidity, it is filtered and put into bottles. Absolutely no water, no sugar, and no coloring are added in this natural process. The true cabernet flavor is retained, and is exceptional in salad dressings and soups, and as a marinade for chicken and all cuts of meat.
Barrel aging, or the “Orleans”method, is rarely found in the United States today. Single-varietal wines are allowed to convert to vinegar in oak barrels, monitored for quality and balance, and released for bottling at the perfect time. The character of the cabernet grape is beautifully pronounced in this pungent gourmet vinegar. Concentrated flavor—use sparingly! Contains naturally-occurring sulfites.
